What is Hotel and Catering Management?
Hotel and catering management fall under the umbrella of the hospitality industry. As such you'll typically find information relating to hotel and catering courses under tourism and hospitality management. Hotel Management
The duties of a hotel manager vary according to the size and type of the business. In large hotels, general managers are in charge of the entire hotel. They may be in charge of determining room rates, monitoring income and expenses, and supervising other staff. In large hotels that have restaurants and conference facilities, assistant managers are generally on hand to help managers supervise the various areas of the hotel. Often, assistant manager job titles describe their duties. For example, executive housekeepers make sure that all areas of the hotel are clean, front office managers are in charge of reservations and room assignments, food and beverage managers oversee restaurants and banquets, plan menus, set prices, and order supplies. Convention services managers coordinate all hotel activities related to meetings and have to work hand in hand with other managers, such as the food service and front office managers to accommodate guests.
Assistant managers hire, train, and supervise their members of staff. They need to submit regular reports about their area and are responsible for reordering supplies. Some may even have accounting, sales, and maintenance tasks. They have regular meetings with general managers.
The duties of small hotel managers differ from those that manage large hotels. Often they will be responsible for many non-managerial type duties, such as housekeeping and making general repairs, especially if other staff members are absent. They are also responsible for all the administrative tasks, such as recruitment, bookkeeping, reservations and managing schedules.
Resident managers live on the hotel premises. They are on-call 24 hours a day although they tend to work eight-hour shifts.
Catering Management
Catering managers plan, organise and develop the food and beverage services of organisations and businesses. They are responsible for meeting customer expectations, maintaining food and hygiene standards and achieving financial targets. There are a wide range of jobs in catering management, all of which can be obtained via a number of different career paths.
You'll find catering managers in restaurants, bars, hotels, resorts and cruise liners; or in private business enterprises catering events; or running public catering operations in hospitals, schools and prisons. With ongoing growth in the service industry, opportunities in this demanding but rewarding area continue to grow.
